The Vintage of the Land

Winemaking process: Fermentation of the destemmed grape in temperature-controlled vats which never go over 28º C. Kept in the vats for over 56 days between the alcohol and malolactic fermentation. An 8-day cold maceration is carried out before starting the alcohol fermentation.


Aging: Immediately after the malolactic fermentation, it is kept in French oak barrels for 12 months, with a 50% annual top up. It ages in the bottle for at least 6 months.
